Vineyard & Region: Fruit sourced from Tumbarumba region, New South Wales, Australia.

Bouquet: A generous array of lemon preserve and roasted cashew nuts, touch of custard apple and kaffir throughout.

Palate: Fresh and bright palate with a touch of salty drive. Quite modern in style with nice expansive custard apple and lemon zest fruit, while supported with lightly toasted French oak delivering direction and drive. Finishes with moreish roasted cashew and pine nut flavours.

Suggested Cuisine: Linguine with crab and zucchini flowers fresh parsley, served with crusty ciabatta bread

Winemaking: Hand harvested on the 4th March, 2019 and transported a short distance directly to a contract crushing facility in Tumbarumba, for immediate whole bunch pressing. Upon frequent tasting, the free run cut was taken at approximately 625 L/T, and the juice chilled to 0’C, un-sulphited, with full solids, ready for delivery to Calabria Family wines Brayne road winery. Upon receival, the juice was allowed to roughly settle for approximately 10 hours then racked off heavy thicks, with full solids, directly to barrel for fermentation. 30% Wild, 70% seeded (Burgundian isolate), 15% new oak, 100 % French, 100% barrique. Upon completion of primary ferment, all barrels were promptly sulphured (Zero Malo-Lactic Fermentation was allowed to occur as our aim is to retain full natural acidity) and topped full, then allowed to battonage (lees stir) for 9 months, with decreasing intervals of mixing, from weekly to eventually bi-monthly. All barrels were then blended out of barrel, fined, stabilized and filtered to bottling.
