Palate: Refreshing and crisp with tight acid and great length complimented by a delicate finish.
Suggested Cuisine: Fresh Seafood & crunchy salads Cevice; white fish marinated in citrus juice, with a hint of chilli, coriander and mint.
Winemaking: The fruit is harvested in the cool of the night and delivered to the winery for processing. The juice is crushed and pressed with minimal SO2. Light fining with carbon removes any salmon colour from the juice. The juice is clarified then fermented at cool temperatures. There is no oak contact, the intention is to put the fruit forward and produce a crisp and refreshing Pinot Grigio.
